【摘要】:ThisInternationalStandardspecifiesthereferencemethodforthedeterminationofthefatcontentofraw,processedandsourcreaminwhichnoappreciableseparationorbreakdownoffat,duetolipolysis,hasoccurred.Themethodisnotapplicableforsourcreamswithstarchorotherthickeningagents.NOTEIfthemethodisnotapplicableandwhenseparationorbreakdownoffatoccurs,recourseshouldbemadetoamethodutilizingtheWeibull-Berntropprinciple(seeISO8262-3).
